Potbelly has announced the launch of a new restaurant in the Stonebridge Ranch community of McKinney. The establishment is scheduled to open on Saturday, September 5, 2026, at the Eldorado Neighborhood Shops. The specific address is Suite 108 at 3200 S. Stonebridge Drive, situated near the intersection of Eldorado Parkway and Stonebridge Drive.
The new shop is owned and operated by Barry and Remington Burke, a father-son team representing Burke Restaurant Group. The pair brings extensive experience in multi-unit restaurant operations and franchising to the venture. Remington Burke stated that the area’s community feel and growth made it a suitable location for the brand.
He expressed anticipation for serving both existing customers and new guests with the company’s standard menu items and service style.
The menu will feature the chain’s standard offerings, including oven-toasted sandwiches, wraps, salads, shakes, and cookies. The location aims to provide dining options for residents, students, and local businesses. Services include in-store dining, delivery, order-ahead options, and catering for various events. These services are accessible through the Potbelly website, the mobile app, and third-party delivery platforms.
Regular operating hours for the new location are set from 10 a.m. to 9 p.m. daily. To mark the opening, a community event is planned for September 19 from 11 a.m. to 1 p.m. This event will include activities and merchandise giveaways.
