The decision to open the business followed a period of profound loss for the family. Callie Colwick experienced multiple miscarriages before becoming pregnant with her son, Quinn. During her pregnancy, she suffered a rupture of membranes at approximately twelve weeks gestation. Medical professionals initially indicated she would deliver the baby, but her condition deteriorated rapidly.
Callie Colwick gave birth to Quinn, who died shortly after. Simultaneously, she was diagnosed with sepsis, a severe blood infection. Kevin Colwick stated that doctors warned her life was in immediate danger as the infection spread. She required extensive medical intervention, including a year-long stay in the intensive care unit.
The treatment resulted in the amputation of both of Callie Colwick’s legs and several fingers. Kevin Colwick remained at her bedside throughout the ordeal, describing the experience as earth-shattering. He noted that her survival depended on his constant presence and support during her recovery.
Following her rehabilitation, the couple shifted their focus to their shared interest in French pastries. Callie Colwick recalled first enjoying a crepe near her obstetrician’s office and developing a fondness for the dessert.
