Potbelly has opened a new restaurant in the Stonebridge Ranch community of McKinney. The location, situated at the southern edge of the master-planned community, began serving customers on September 5. It is located in the Eldorado Neighborhood Shops near the intersection of Eldorado Parkway and Stonebridge Drive.
The shop is owned and operated by Barry and Remington Burke of Burke Restaurant Group. The father-son team stated that the area’s growth and neighborhood character attracted them to the location. As part of a 15-shop development agreement, the Burkes plan to open additional Potbelly locations across North and East Texas in the future.
Remington Burke noted that the strong sense of community in West McKinney made it a suitable fit for the brand. He expressed the team’s readiness to welcome both longtime fans and new guests with the menu items and service style associated with the chain.
The menu features oven-toasted sandwiches, wraps, salads, hand-dipped shakes, and baked cookies. The restaurant operates daily from 10 a.m. to 9 p.m. Customers can order in-store, online, or through the Potbelly app, with third-party delivery services also available.
To mark the opening, the restaurant hosted a celebration event on September 19 from 11 a.m. to 1 p.m. The event included a Spin the Wheel activity where guests had the chance to win merchandise and other giveaways, including prizes for free food for a year.
