Travelers using McKinney National Airport's new passenger terminal could start their trips with locally roasted coffee and a sandwich from a self-checkout market, under a concession deal the City Council takes up Monday, Oct. 5.
Council is also set to vote on a rental car agreement with Enterprise for the terminal, which is scheduled to open Nov. 11. Both items are on the regular meeting agenda, and city staff recommends approving each.
Food and drink
Staff is recommending Creative Hospitality Solutions LLC as the terminal's food and beverage operator. The company ranked highest of eight proposals the city opened Aug. 6, according to the staff report. An evaluation team from the airport and the City Manager's Office scored the bids on concept and menu, operations and staffing, experience, design, and finances.
The proposal described in the staff report centers on a full coffee and specialty drink bar with a fresh bakery for morning departures, plus made-to-order sandwiches, salads and hot items through the day. A self-service "Mobile Market" with tap-to-pay checkout would stay open between flight banks.
The plan includes coffee from North Texas roaster Armor Coffee Company, a shelf of local goods branded "McKinney Made," and beer and wine if TABC licensing and the city allow it.
The city would collect a percentage of gross sales. The deal runs three years with two possible one-year renewals. Based on the city's passenger forecast, the proposal projects rent to the city of about $100,000 in the first year, $200,000 in the second and $400,000 in the third, though the report notes those numbers will move with actual traffic.
A minimum monthly payment would kick in only after the airport tops 500,000 boardings a year.
